#48) Mega-Orange Muffins



These giant muffins were quite a surprise when I took the first bite!!! I never imagined the orange flavour would be as prominent as it was and the texture was simply perfect. The orange flavour can be attributed to the orange juice and more so to the amount of zest included. The texture can be credited to the use of cake flour and the addition of whipped egg whites. Although I love these muffins as is, next time I am planning on adding some orange jam to the middle before baking :)

Ingredients

2 egg whites
1 3/4 cups cake flour
1 cup sugar
2 tsp baking powder
1/2 cup vegetable oil
1 cup orange juice
zest of one large orange (my orange was the size of a softball!)

Steps

-Preheat oven to 350°F and grease a jumbo muffin pan.
-Beat egg whites until stiff peaks form.
-Whisk together dry ingredients. Add oil and juice. Mix until combined.
-Gently fold in egg whites.
-Divide between muffin wells and bake for 20 minutes.

  8. I tried this recipe last night because I was craving to taste them since the I saw the recipe. Unfortunately my attempt at it was a total flop. I want to try it again because I feel I did something wrong somewhere. They looked beautiful, but when I bit into them all I could taste was flour. What did I do wrong? Please help.

    First of all I want to say "thank you" for dropping by my blog! I really appreciate it :)

    Now on to the dirty stuff...

    My first question would be what kind of flour did you use?
    I suggest cake flour becasue it will five you a nicer texture. As it happens, I didn't have any cake flour on hand, but it is simple to make (for every one cup of flour remove 2 tbsp and add 2tsp of cornstarch). This may be the root of some of your troubles.

    Second question - did you use the whole cup of sugar the recipe calls for? If not this could upset the balance and give you a less appetizing flavour.

    Third - once you add the whipped egg whites it is necessary to fold just until incoporated. If you over-work the batter you will get a tougher result and quite possible a different flavour....

    And I guess my last question would be did you use the correct amount of flour and baking powder? Obviously too much of either will ruin the taste.

    I really hope some of these hints help as they are actually a very delicious sweet treat.... Please let me know if you try again. And stay tuned to sweettreatsdani.com for new recipes soon :)
