#92) Flourless Chocolate Cake with Homemade Mint Ice Cream

Chocolate lovers unite!  
This is the desert to please any and all chocolate lovers worldwide :)

Although this cake is called "Flourless Chocolate Cake" it would be better named "Chocolate Truffle Cake" because it is like sitting down with your favourite, delectable chocolate truffle and a fork.  Rich, dense, creamy, and chocolatey.  And the mint ice cream on the side is the perfect pairing, with its light mint flavour from fresh mint leaves and peppermint tea.  It helps to cleanse the palette between the heavenly bites of creamy chocolate cake.


The cake itself is simply divine and I support all the claims made by the author in terms of ingredients, methods, etcetera.  My only complaint is removing the cake from the springform pan.  The book (Cook's Illustrated: All-Time Best Chocolate Recipes) made it sound so easy - flip it over on some parchment, peel off the bottom of the pan and the parchment round, flip over on to your cake stand.  Well, my cake did not want to let go of the bottom of the pan or the parchment round...  I had to cut out two slices of cake and gingerly remove them, with minor damage to the slices, before I could get my spatula under the parchment round to release the rest of the bake.  In hindsight, maybe I should have left a lip of parchment outside of the springform pan to give me something to hold on to when removing the cake, but I am not sure if that would cause issues with the water bath and possible water seeping into the springform pan.  Anyone out there have any tips on that?


Now let's talk ice cream!  Is there any better treat for a lazy almost-summer day?  I think not ;)  And what possible flavour could go with this decadent chocolate truffle cake than mint?  A perfect match, if I do say so myself. 


I am very new to the world of ice cream making - this is just my third batch.  However, I have learnt some valuable lessons is researching recipes and making a few of my own.

Lesson #1 - the type of dairy you use is crucial, as it will be the deciding factor when it comes to the texture of your ice cream.  Long story short, the higher the fat content, the creamier the ice cream.  I stick to whipping cream as it really does lend that stick-to-your-tongue creaminess I crave from ice cream.  But if you are looking to lighten things up a little you can certainly use half-and-half or even 2% milk, but it will make for an icier ice cream.


 Lesson # 2 - Do NOT walk away from simmering cream or cooking custard!  Unless you want ice cream à la scorched cream or scrambled eggs, stay next to those pots while they are on the stove.  Dairy is a bit of a diva and will go form a nice simmer to burnt in 60 seconds flat.  (And I am convinced it knows when you're not watching!)  And those eggs you just added to your simmering dairy?  I am confident their goal in life is to grow up and become scrambled eggs.  Keep your burner on low-medium heat and constantly stir your custard.  (And when in doubt, strain the cooked custard before you put it in to chill.)


Lesson # 3 - Patience is key.  Just like you want your dairy to come to a nice simmer in the beginning, you also want your nicely cooked custard to chill adequately before throwing it into the ice cream maker.  4 hours minimum seems to be the rule of thumb, but I always chill it in the fridge overnight to be safe.


Flourless Chocolate Cake

Ingredients

8 eggs, chilled
1 pound (16 ounces) bittersweet of semisweet chocolate (I used semisweet)
1 cup butter (16 tablespoons), softened (use REAL butter, not margarine)
1/4 strong brewed coffee, room temperature

Steps

Preheat oven to 325°F.  

Grease bottom and sides of 8" springform pan.  Line bottom with parchment.  (I would likely add a collar of parchment around the sides of the springform pan next time as well.)

Wrap outside of springform pan with two large pieces of aluminum foil.  Set in roasting pan.  

Boil full kettle of water.

Whip all 8 eggs together on medium speed until doubled in volume; about 5 minutes.

Meanwhile, combine chocolate, butter, and coffee in top of double boiler.  Over simmering water, allow chocolate, butter, and coffee to melt together, stirring occasionally.  Do not let the water touch the bottom of the bowl.

Remove chocolate mixture from heat and fold in 1/3 of the whipped eggs until few streaks are visible.  Add remaining whipped eggs in two additions, mixing until homogenous.

Transfer batter to prepared pan.  Set roasting rack on oven rack and fill with  enough boiling water to come about halfway up the sides of the springform pan.

Bake 22-25 minutes or until cake registers 140°F (mine took the full 25 minutes).  Edges will be just set and the centre may look underdone.  Don't worry, it will continue to firm up as it cools.

Cool completely in pan.  Wrap pain in plastic wrap and refrigerate overnight.

Before removing from the pan, run a knife around edges to loosen the cake form the sides of the pan.  Invert cake onto a sheet of parchment and remove the bottom of the pan and parchment round.  Reinvent cake on to your cake stand.  (Like I said, this method was problematic for me and if anyone has any tips I am all ears!)


Mint Ice Cream

Ingredients

2 cups whipping cream
1 cup whole milk
Mint leaves (I used one small bunch from our mint plant and about 1 tbsp of peppermint tea leaves)
6 eggs yolks
1/2 cup sugar (could be reduced, in my opinion)
*a pinch of salt could be used here as well to round out the sweetness

Steps

In a saucepan (preferably not non-stick) , bring cream and milk to a simmer.  Remove from heat and add your mint and/or tea leaves.  Cover and let steep for 2 hours.  (I've done some reading on the topic of flavouring ice creams with tea leaves and 2 hours seems to be enough time to let the flavours marinate and it won't take you all day to get the custard finished.)

In another saucepan, whisk together egg yolks and sugar.  Strain your flavoured dairy mixture into the yolk mixture.  Whisk until combined and set over low-medium heat.  Cook, whisking frequently, until custard forms (run your finger through the custard left on the back of your spoon - if a clean line remains, its custard).

Strain custard into an airtight container and refrigerate overnight.

Churn ice cream according to your ice cream maker's manufacturer's instructions.  Freeze to harden (I had mine in the freezer for about 3 hours.)

*Hubby and I found the mint flavour a little grassy for our tastebuds.  We found it was very enjoyable with the cake, but not so much on its own.

#47) Minty Midnight Bars



I have mentioned before my uncontrollable craving for brownies, and this past week has been no exception. I guess knowing that I am off the whole week for March break has convinced my baking conscience that I can spend all day in the kitchen whipping up sinful treats... Too bad my hips don't have a conscience :)

Anyway, back to the bars - they have a surprisingly chewy brownie base covered with a minty buttercream, then the whole thing in encased by a delicious chocolate shell.

I used food colouring in the buttercream to highlight its minty flavour (from extract), but next time I want to leave it white and use fresh chopped mint. I know that sounds like a mild request, but in Goose Bay finding any fresh herb is a challenge, never mind one like mint HaHa.

I know, I have gabbed enough. Here is the recipe!

Brownie Base

Ingredients

1/2 cup butter, melted
1 cup sugar
1 tsp vanilla
2 eggs
1/2 cup flour
2/3 cup cocoa
1/4 tsp baking powder

Steps

-Grease 8x8 dish. Preheat oven to 350°F.
-Melt butter. Add sugar and vanilla. Mix well.
-Add eggs and beat until mixed well.
-Add dry ingredients and beat just until blended.
-Pour into prepared dish and bake for 20-25 minutes, until a toothpick comes out clean.
-Let cool in pan completely.


Minty Buttercream

Ingredients

1 1/3 cups icing sugar
1/4 cup butter
1/2 tbsp water
3 tsp mint extract
4 drops green food colouring

Steps

-Cream together all ingredients until smooth.
-Spread over cooled brownies.
-Refrigerate until cold and set.


Chocolate Shell
Ingredients

4 tbsp butter
1 cup chocolate chips

Steps

-Melt together in double boiler.
-Let cool slightly.
-Pour over frosted brownies.
-Refrigerate until chocolate hardens (about 1.5 hours).
-Cut in squares and enjoy :)

#43) Minty Brownie Drops



Since I started this blog I have tried dozens of new recipes.... leaving some old favorites behind. I guess with precious time to spare in the kitchen I find repeating recipes boring.

However, today I had an undeniable craving for my minty brownies, but did not want to spend my baking time with an already-accomplished recipe. So, I took that brownie recipe and tweaked it to come up with a matching cookie recipe.

And the result? Well let's just say I am home alone, and the cookies are almost gone :)

Ingredients

2/3 cup shortening
1 1/3 cups brown sugar (I used dark but light would be fine)
1 tbsp water
1 tsp mint extract
2 eggs
1 1/4 cups flour
1/3 cup cocoa
1/2 tsp salt
1/4 tsp baking powder
1 cup chocolate chips (I would have used mint chips if I had had any)

Steps

-Preheat oven to 350°F.
-Cream shortening, sugar, water, and extract. Add eggs. Beat well.
-Stir together dry ingredients and add to sugar mixture in three additions. Mix well.
-Stir in chips.
-Drop by tablespoonful onto lined baking sheet (I used a silicone sheet, but parchment paper would do).
-Bake for 10 minutes.
-Let cool on wire rack.

#27) Candy Cane Cupcakes


Alrighty folks... the holiday season is upon us and you all know what that means - BAKING!!! Nicole @ Baking Bites is hosting a Holiday Cupcake Contest and seeing as I have loads of free time now that the semester is over, I wanted in. I whipped up a plain vanilla batter and divided it in thirds. To one third I added raspberry candy flavouring and red food colouring, to a second peppermint candy flavouring and green food colouring, and the third I left as is. To all three bowls I added some crushed candy cane. They baked up nicely, but I have to say they were a little dense for my liking... next time I think I will use less butter. In any case, here is the recipe:

Cupcakes

Ingredients

3 eggs
1 cup butter
1 cup sugar
1/2 cup buttermilk
1 1/2 cups flour
1 1/2 tsp baking powder
1 tsp vanilla
raspberry candy flavouring
red food coloring
peppermint candy flavouring
green food colouring
2 crushed candy canes

Steps

-Preheat oven to 320°F and line muffin cup with liners.
-Lightly beat eggs. Add butter and sugar and beat until light and fluffy.
-Add buttermilk, flour, baking powder, and vanilla. Beat until light and creamy.
-Divide mixture evenly among three bowls.
-To one bowl add 5 drops raspberry flavouring and red food coloring. Mix.
-To a second bowl add 5 drops peppermint flavouring and green food colouring. Mix.
-Add crushed candy cane to each bowl and mix
-Add the different coloured batter to the liners by tablespoonfuls, creating layers in each liner.
-Once all the batter has been distributed, poke a fork into each liner twice.
-Bake for 20 minutes and let cool completely.

Buttercream Frosting

Ingredients

1 1/4 sticks butter
1 1/4 cups icing sugar
sprinkle salt
1 tsp vanilla
1 tbsp milk
1 crushed candy cane

Steps

-Beat butter until smooth (20 seconds).
-Add sugar and salt. Beat for one minute.
-Scrape down sides of bowl and add vanilla and milk. Beat for 2 minutes.
-Pipe or spread on cooled cupcakes.
-Sprinkle candy cane on top.

#4) Beautiful Brownies


When it comes to sweets I have many loves, but if I was forced to choose just one sweet treat to have for the rest of my life, it would would be the brownie, without a doubt! I love brownies for many reasons: first of all, I am a chocoholic with a severe dependence on all things cocoa; second, I am a sucker for anything chewy and gooey; finally, a good brownie recipe hands itself over body and soul to a countless number of flavour mash-ups. This recipe is an A+ in my opinion, resulting in a pan of gooey, rich, satisfyingly chocolately brownies :) (The brownies pictured were my minty experiment...... DELICIOUS!)

Ingredients:

1 2/3 cup sugar
3/4 cup cocoa
1 1/3 cup flour
1/2 tsp baking powder
1/4 tsp salt
3/4 cup chocolate chips
3/4 cup melted butter
2 eggs
2 tbsp water
2 tsp vanilla

Steps:

-Preheat oven to 350°F.
-Sift together sugar, cocoa, flour, baking powder, and salt. Add chocolate chips.
-Add melted butter, eggs, water, and vanilla.
-Pour batter into a 13x9 inch greased pan.
-Bake for 18-20 minutes until a toothpick comes out slightly covered in brownie (all ovens vary so be cautious and check often within the last couple of minutes).

*I baked these for 19 minutes, but the boyfriend said they could have baked another minute or so for a better texture.

Flavour Ideas:

-Mint: mint chocolate chips + mint extract
-Terry's Chocolate Orange: rough chopped chocolate orange + orange extract
-Savoury Southwest: monterey jack cheese slices over top of batter

Tip:

-Let your imagination be your only limitation and have fun with it :)
